PROBLEM TO BE SOLVED: To provide a hyaluronidase inhibitor which is prepared by effectively utilizing, as a functional material, silver skin of coffee traditionally treated mainly as an industrial waste.
SOLUTION: The silver skin is effectively utilized for the hyaluronidase inhibitor by administering a predefined extraction process. As an illustrative embodiment, the hyaluronidase inhibitor is produced by subjecting an extract extracted from the silver skin by using water as an extraction solvent to solid-liquid separation (filtration) and then utilizing a solid content obtained by drying a supernatant part as an active ingredient. As another illustrative embodiment, the hyaluronidase inhibitor is produced by subjecting an extract extracted from the silver skin by using water as an extraction solvent to solid-liquid separation (filtration), subjecting an object obtained by an enzyme treatment of a residual part to solid-liquid separation (filtration), and then utilizing a solid content obtained by drying a supernatant part as an active ingredient. In a case of obtaining a more powerful inhibitor, a polymer fraction is withdrawn from an extract and is made into the hyaluronidase inhibitor.
