PURPOSE: A processing device of bean sprouts is provided to remove a root part and a sprout part of the bean sprouts by rapidly and correctly aligning and transferring the cultivated bean sprouts, and to easily transfer the bean sprouts. CONSTITUTION: A processing device of bean sprouts includes the following: a bean sprout inflow part(100) on which the cultivated bean sprouts are put； a bean sprout transfer conveyor(200) consecutively transferring stem parts of the bean sprouts in a bean sprout heap； a bean sprout aligning conveyor(300) aligning the bean sprouts in a longitudinal direction； a first cutter(400) removing roots parts of the bean sprouts； a second cutter(500) removing spout parts of the bean sprouts； and a bean sprout pressurizing conveyor(600) horizontally transferred by the bean sprout aligning conveyor.본 발명은 수확된 콩나물을 가지런하게 정렬 이송시켜서 콩나물의 싹부분과 뿌리부분을 기계적으로 절단하는 콩나물의 가공 장치에 관한 것으로 수확된 콩나물 더미가 놓여지는 콩나물 유입부와, 상기 콩나물 유입부에 놓여진 콩나물 더미에서 콩나물들의 줄기부분을 연속적으로 잡아끌고 나가는 콩나물 이송 컨베이어와, 수평이동 되는 콩나물들을 그 길이방향으로 가지런하게 해주는 콩나물 정렬 컨베이어와, 콩나물의 뿌리부분을 제거해주는 제1절단기구와, 콩나물의 싹부분을 제거해주는 제2절단기구와, 상기 제1절단기구와 제2절단기구 쪽으로 수평 이동되는 콩나물의 줄기부분을 눌러주는 콩나물 가압 컨베이어를 포함한다.
