At least one kind of palm-based oils as an ester is prepared in exchange of oil-and-fat of a raw material, adequate amount of the palm-based oil is combined, so as to obtain an oil-and-fat composition for processed food of fishery product, which has a suitable hardness and smooth feeling in addition to a decreased content of trans fatty acid thereof.
