The present invention relates to fermented soybean which is solid-fermented by mushroom, composed of: steamed soybean; and at least one of mushroom mycelium selected among Polyozellus multiplex (Underw.) Murrill, pine mushroom, and Grifola frondosa (Dicks.) Gray, and a cultured product thereof. The present invention further relates to a production method thereof. According to the present invention, amountd of conjugated linoleic acid and non-glycoside-isoflavin are increased while content of ammonia is decreased, and flavor is improved, thereby enabling production of functional foods having antioxidative activities and effects of ameliorating diabetes and obesity.본 발명은 까치버섯, 송이버섯, 및 잎새버섯에서 선택되는 1종 이상의 버섯 균사체 및 그 배양물 중 적어도 하나 이상; 및 증자시킨 콩을 포함하는, 버섯에 의해 고체 발효된 콩발효물 및 이의 제조방법에 관한 것이다. 본 발명에 의하면, 공액리놀레산 및 비배당체-이소플라빈이 증진되고, 암모니아 함량이 감소하고 풍미가 개선되고, 항산화 활성, 당뇨 및 비만 개선 효과를 갖는 기능성 식품을 제공할 수 있다.
