PROBLEM TO BE SOLVED: To provide a new boil processing apparatus capable of performing optimum boiling by more correctly adjusting the pressure of a pressurized boil chamber.SOLUTION: The boil processing apparatus 1 includes double airtight structures 7 for keeping the pressurization state of the pressurized boil chamber 2 at the both charge side and discharge side, thereby keeping the pressurization state at high levels in the pressurized boil chamber 2 even when food W is charged to the pressurized boil chamber 2 and is discharged from the chamber 2. A pre-boil chamber 3 for setting a pressurization or normal pressure state is arranged in the pre-stage of the pressurized boil chamber 2, the pre-boil chamber 3 being configured to equalize the pressure therein with the pressure in the pressurized boil chamber 2 through the use of a pressure equalization communication pipe 28.
