To provide a method for efficiently processing edible raw fish meat seasoned with seasoning vinegar to provide a method for simply mass-producing pressed sushis such as trout-sushis of various sizes.

SOLUTION: The method for processing edible raw fish meat seasoned with seasoning vinegar is to season small blocks of fish meat, subsequently mix the same with transglutaminase, put the same in a molding vessel to bind and form and freeze and slice the same as it remain frozen. Pressed sushi is produced by using a molding vessel having a cross-sectional shape coinciding with the shape of the pressed sushi to process the edible raw fish meat and using the processed fish meat.
