The present invention generally relates to the production of steviol glycosides. Enzymatically modifying a modified steviol glycoside comprising incubating a steviol glycoside substrate in the presence of sucrose and Lactobacillus reuteri strain 180 glucan sucrase GTF180, or a variant thereof having the desired transglycosylation activity A method of providing is provided. Also provided are modified steviol glycosides obtained by the method of the present invention and their use as low glycemic sweeteners.
