The present invention relates to a method for manufacturing an Akebia quinata extract and functional food using an Akebia quinata extract, and more particularly, to a method for extracting saponin, which is a physiologically active ingredient, with high efficiency comprising sequential steps of a) adding the flesh of Akebia quinata to an Akebia quinata seed and aging the mixture, and b) performing alcohol-extraction of an extract, a method of improving an extraction efficiency of saponin by adding ginger, and a food composition containing the extract extracted thereby. The extraction efficiency of saponin from the Akebia quanta seed is improved by using the flesh of Akebia quinata, which has been not used in saponin extraction, so a higher added-value may be created.COPYRIGHT KIPO 2016
