The present invention relates to a manufacturing method for a dry fruit pastry. The invention aims to provide a method for effectively manufacturing a pasty in which the dry fruit is used, wherein the dry fruit is used as a primary raw material and the fruit sheets do not get loosen in eating. The task is settled through the manufacturing method of the dry fruit pastry (5). The method is characterized by comprising the following steps: a preforming step (2) of placing the dry fruits (1) into a forming mold for forming to a rod shape, and a formal forming step (4) of taking the dry fruits which are respectively formed to a rod shape into the forming mold and bonding the dry fruits through pressurizing. Through two stage forming which comprises the preforming step and the formal forming step (4), the dry fruits are formed.
