The present invention provides a method for preparing a plant derived beverage product or process intermediate, the method including the steps of: providing a crushed or liquefied extract of a plant material, exposing the extract to a size exclusion purification means involving membrane filtration (such as nanofiltration, ultrafiltration, reverse osmosis or cross flow filtration) to provide a beverage product or a process intermediate thereof, wherein the purification means is capable of at least partially separating an undesirable component, from a desirable component. The purification methods may be applied to plant materials to selectively remove various components, while leaving others. This allows for the preparation of custom plant extract beverages.La présente invention concerne un procédé permettant de préparer un produit à boire dérivé de plantes ou un produit intermédiaire transformé. Le procédé comprend les étapes consistant à : produire un extrait broyé ou liquéfié d'une matière végétale, exposer l'extrait à un moyen de purification par exclusion de taille faisant appel à une filtration par membrane (telle que la nanofiltration, l'ultra-filtration, l'osmose inverse ou la filtration à flux croisés) afin d'obtenir un produit à boire ou un produit intermédiaire transformé de celui-ci, le moyen de purification par exclusion de taille étant capable de séparer au moins partiellement un composant indésirable d'un composant souhaité. Les procédés de purification peuvent être appliqués à des matières végétales pour éliminer sélectivement divers composants, tout en en laissant d'autres. Cela permet de préparer des boissons aux extraits de plantes personnalisées.
