PURPOSE: A producing method of candied ginseng slices is provided to maintain the circular shape of the cross section of the ginseng slices, and to improve the chewing feeling of the ginseng slices. CONSTITUTION: A producing method of candied ginseng slices comprises the following steps: assorting 4-6 years old fresh ginseng, and removing the rhizome, the radicels, and branches from the ginseng; washing the ginseng, and cutting the ginseng into a circular or an oval shape into the thickness of 3-5mm; drying the 20-30% of ginseng slices, and dipping the dried ginseng slices in a sweetener aqueous solution without calories for 2-6 hours; heating the ginseng slices at 90-95 deg C for 20minutes-2 hours; and freeze-drying the heated ginseng slices. The sweetener in the sweetener aqueous solution is selected from stevioside, saccharified stevioside, aspartame, or saccharin.본 발명은 수삼 동체를 3-5mm 두께로 절단하여 20-30% 건조한 후 열량없는 감미료를 침적시키고 90-95℃에서 가열하여 조직 연화과정 및 살균과정을 거치고 동결건조시킴으로써 인삼 원반 형태를 완전히 유지하고 부드러운 식감으로 모든 연령층에서 쉽게 섭취할 수 있으며, 미생물에 의한 위험성을 줄여 보존성을 확보한 것을 특징으로 하는 인삼 원반 및 그 제조방법에 관한 것이다.
