The present invention relates to a production method of rice powder for cooking instant rice cake, which comprises: (a) a milling step of producing a semi-wet rice powder by milling the semi-wet rice produced by spraying water to raw rice; (b) a pretreatment step of producing the pretreated rice powder by gelatinizing the semi-wet rice powder by extrusion; and (c) an enzyme treatment step of producing enzyme-treated rice powder by treating the pretreated rice powder with starch degrading enzyme. The instant rice cake can be cooked using the rice powder for a short time and can be easily consumed. In addition, the taste can also be improved.본 발명은 (a) 원료 쌀에 물분사 처리하여 제조된 반습식 쌀을 제분하여 반습식 쌀가루를 제조하는 제분단계; (b) 상기 반습식 쌀가루를 압출(extrusion)에 의해 호화시켜 전처리된 쌀가루를 제조하는 전처리단계; 및 (c) 상기 전처리 쌀가루를 전분분해효소 처리하여 효소처리된 쌀가루를 제조하는 효소처리단계;를 포함하는 즉석 떡 조리용 쌀가루의 제조방법에 관한 것이다. 이에 의하여, 쌀가루를 이용하여 즉석 떡을 짧은 시간 동안 조리하여 간편하게 섭취할 수 있으며 기호도 또한 향상시킬 수 있다.
