The present invention provides a kimchi-derived lactic acid bacterium with increased EPS production. The present inventors screened a strain among 450 strains isolated from kimchi, which produces acid and generates mucilage. GS-94 strains producing the highest amount among the strains were selected, and as a result of confirming the morphological and biochemical characteristics, it was confirmed that the kimchi-derived lactic acid bacterium are novel Leuconostoc citreum strains as a gram-positive coccus.본 발명은 EPS 생산량이 증가 된 김치유래 유산균을 제공한다. 본 발명자들은 김치로부터 분리한 450 균주 중 산을 생성하며 점질물을 생성하는 균주를 스크리닝하였다. 이들 균중 증 가장 많은 양의 점질물을 생성하는 GS-94 균주를 선별하였으며, 형태학적인 특성 및 생화학적 특성을 확인한 결과 그램 양성 구균으로서, 신규한 Leuconostoc citreum 균주임을 확인하였다.
