PROBLEM TO BE SOLVED: To provide a fermented product including an equol-producing microorganism maintaining equol productivity in a state of viable cells.SOLUTION: The fermented product including an equol-producing microorganism maintaining equol productivity in a state of viable cells can be produced by (1) preparing a mother starter by using the equol-producing microorganism and fermenting at a pH of not less than 5.0 in the presence of daidzein under an anaerobic condition, (2) preparing a bulk starter by using the mother starter and fermenting at a pH of not less than 5.0 in the presence of daidzein, and (3) preparing the fermented product by using the bulk starter and fermenting it in a medium containing soybean flour or soybean milk, in producing the fermented product using the equol-producing microorganism and soybean flour or soybean milk as a raw material.COPYRIGHT: (C)2011,JPO&INPIT【課題】本発明の目的は、エクオール産生能が維持されたエクオール産生微生物を生菌の状態で含む発酵製品を提供することである。【解決手段】エクオール産生微生物を用い、大豆粉末又は豆乳を原料として発酵物を製造する際に、(1)エクオール産生微生物を用いて、ダイゼイン類の存在下、pH5.0以上、嫌気条件下で発酵することにより、マザースターターを調製する、(2)前記マザースターターを用いて、ダイゼイン類の存在下、pH5.0以上で発酵することにより、バルクスターターを調製する、(3)前記バルクスターターを用いて、大豆粉末又は豆乳を含む培地で発酵して発酵物を調製することによって、エクオール産生能が維持された微生物を生菌のままで含む発酵物の製造が可能になる。【選択図】なし
