Described is a novel method for the preparation of a protein hydrolysate comprising phospholipids and at least 6w/w% cholesterol, the weight ratio between cholesterol and phospholipids being between 1 : 0.5 and 1 : 3, comprising the steps of providing animal brain tissue, animal spine tissue, or a combination thereof, and optionally bile, subjecting the tissue to hydrolysis to obtain a protein hydrolysate, antimicrobial heat treatment of the protein hydrolysate and drying the antimicrobially treated protein hydrolysate.Linvention concerne un nouveau procédé de préparation dun hydrolysat de protéines comprenant des phospholipides et au moins 6 % poids/poids de cholestérol, le rapport pondéral entre le cholestérol et les phospholipides variant de 1/0,5 à 1/3. Ce procédé comprend les étapes consistant à utiliser du tissu cérébral animal, du tissu rachidien animal, ou une combinaison de ceux-ci, et éventuellement de la bile, à soumettre le tissu à une hydrolyse pour obtenir un hydrolysat de protéines, à soumettre lhydrolysat de protéines à un traitement thermique antimicrobien et à sécher lhydrolysat de protéines ayant reçu ledit traitement antimicrobien.
