<;P>;PROBLEM TO BE SOLVED: To provide a method for producing sweet potato processed food storable for a long period of time, supplied in a large quantity, giving satisfactory nutrients to consumers, conductive to chew, and produced by using only sweet potato as a raw material, and also to provide the processed food. <;P>;SOLUTION: The method for producing sweet potato processed food includes the steps of: slicing sweet potatoes (1); drying the sliced sweet potatoes; pulverizing the dried slices (2) to make the sweet potatoes powder (3); adding water (4) to the sweet potato powder (3); kneading the mixture to make dough (5); cutting the dough (5) separately to make plainly extended flatted dough (7); and heating the flatted dough (7) on an iron plate. In the food, the mixture weight ratio of water (4) to the sweet potato powder (3) in the step of making the dough (5) is 4.5-5.5 to 6. In the heating step, the load of about 2.5 to about 4 g/cm<;SP>;2<;/SP>;is applied to the flatted dough (7) heated in the heating step.
