Sodium bicarbonate products are consists of particles containing sodium bicarbonate , and an organic substance which is solid state at ambient temperature . The particles have a structure consisting of a single crystal of sodium bicarbonate which is mutually adhered with the particles . More than 95 % by volume of the particles have a particle size of less than 200m. Furthermore , the particles are hollow (hollow), being formed from said crystalline outer shell (outer shell). Relevant products can speak used as expanding agents in cooking . Relevant products can be be obtained by spray- drying a solution or slurry prepared by dissolving the organic material and sodium bicarbonate .
