IDENTIFICATION OF HUMAN T2R RECEPTORS RESPONDING TO BITTER COMPOUNDS EXTRACTING THE BITTER TASTE FROM COMPOSITIONS AND THE USE THEREOF IN ANALYSES FOR IDENTIFYING THE COMPOUNDS INHIBITING THE BITTER TASTE IN COMPOSITIONS AND THE USE THEREOF
The present invention relates to the identification of the human taste receptors from the family of the T2R receptors, which respond to certain bitter compounds. The invention also relates to specific compounds and to compositions containing such compounds operating as inhibitors of the bitter taste and the use thereof as inhibitors of the bitter taste or as taste modulators for coffee or food tasting like coffee, beverages or medicines. The present invention also relates to an antagonist compound of the human T2R receptors and the use thereof in analyses and as inhibitor of the bitter taste in compositions which may be swallowed by humans or animals.Prezenta invenţie se referă la identificarea receptorilor de gust umani, din familia de receptori T2R, care răspund la anumiţi compuşi amari. De asemenea, invenţia se referă la compuşi specifici şi la compoziţii care conţin astfel de compuşi care funcţionează ca inhibitori ai gustului amar, şi utilizarea acestora ca inhibitotri ai gustului amar sau ca modulatori de gust pentru cafea sau alimente cu gust de cafea, băuturi sau medicamente. Prezenta invenţie se mai referă la un compus antagonist al receptorilor T2R umani, şi la utilizarea acestuia în analize şi ca inhibitor al gustului amar în compoziţii ce pot fi ingerate de oameni sau animale.
