PROBLEM TO BE SOLVED: To provide a method for cost-effectively producing dioscorine as a useful substance from the subterranean stem of Dioscorea plants, especially Chinese yam, in a simple manner.SOLUTION: According to the present invention, a method for producing dioscorine from the subterranean stem of Dioscorea plants comprises a pretreatment step of centrifugally separating finely divided materials of the subterranean stem of Dioscorea plants to recover a viscous liquid, an enzyme treatment step of allowing mannanase to act on the viscous liquid, and recovering step of recovering a supernatant containing dioscorine by centrifuging the liquid after the enzyme treatment. According to the present invention, the use of a commercially available enzyme sold as an industrial enzyme can be manufactured.SELECTED DRAWING: Figure 2
