PROBLEM TO BE SOLVED: To provide a nervonic acid derivative which exhibits an amyloid formation inhibitory action and a method for producing the derivative.SOLUTION: Provided is a nervonic acid derivative represented by a formula (1), which is a derivative formed by bonding of nervonic acid and tyrosine. The nervonic acid derivative is generated by an enzymatic reaction by fermentation, and suppresses formation of amyloid. The production method comprises a process where a fermentation liquid is subjected to a protease treatment, the fermentation liquid being obtained by fermenting seeds of Borago officinalis and soybean powder by adding Bacillus natto produced by Natto Hompo and Monascus purpureus produced by Benikouji Co., Ltd. The obtained nervonic acid derivative represented by the formula (1) exhibits excellent effects and is applied as a cosmetic, a food preparation, and a medicine.
