PURPOSE: A taste improving composition for a high sweetness sweetener, and a use thereof are provided to reduce the unique taste of products having low calorie. CONSTITUTION: A taste improving composition for a high sweetness sweetener contains 100 parts of isomerized sugar by weight, and 1-150 parts of rare sugar by weight containing D-psicose and D-allose. The isomerized sugar and the rear sugar is obtained by isomerizing D-glucose, D-fructose, and more than two isomerized sugar using greater than 0.005mol/l of alkali. The sugar content of the composition except for the D-glucose and D-fructose is less than 60wt%.본 발명은, 종래의 저칼로리 음식품, 특히, 첨가되어야 할 설탕이나 이성화당의 일부 또는 대부분을 고감미도 감미료로 치환함으로써, 저칼로리를 실현한 가식성 제품(음식품)이 가지는 독특한 이미(특히, 입안에 남는 쓴 맛)를 개량하는 것을 과제로 한다.본 발명에 따르면, 고감미도 감미료에 대한 정미(呈味) 개량 조성물, 고감미도 감미료를 함유하는 가식성 제품의 정미 개량 방법, 및 고감미도 감미료의 정미가 개량된 가식성 제품은, 이성화당 및 희소당을, 이성화당 100 질량부에 대하여 희소당 1～150 질량부의 비율로 포함하는 것을 특징으로 한다.
