The method involves blowing cold air inside a rinsing chamber (2) in which air is mixed with steam. The air steam mixture is transported in a pipe (11) in which the mixture is sprayed with cold water so that the steam condenses. Splash water and water derived from the steam condensation are eliminated as the pipe is attached to a drain pipe (4). Rinsing goods provided in the rinsing chamber are cooled by main devices of a rinsing and disinfection machine (1). Another pipe (14) is supplied from a storage tank (7). An independent claim is also included for a rinsing and disinfection machine comprising a rinsing chamber.
