PROBLEM TO BE SOLVED: To provide a method of preparing a protein drink and a liquid product containing whey protein at levels higher than the current "high" levels.SOLUTION: A method for producing a high-protein aqueous solution comprises the steps of: combining intact whey protein with peptides to form a whey protein/peptide mixture； and admixing the protein/peptide mixture with water to form a protein/peptide/water mixture. An acid, which is an admixture of malic, citric and phosphoric acid, in an amount effective to increase solubility of the protein/peptide mixture in the water is added to the protein/peptide/water mixture to produce an aqueous protein/peptide solution, thereby obtaining an aqueous solution containing at least about 7.5% whey protein, and a whey protein drink.【課題】現在の「高い」レベルより、高いレベルでホエイプロテインを含む液体製品、プロテイン飲料を調合する方法の提供。【解決手段】インタクトホエイプロテインをペプチドと配合して、ホエイプロテイン／ペプチド混合物を形成し、該プロテイン／ペプチド混合物を水と混合して、プロテイン／ペプチド／水混合物を形成する高プロテイン含有水溶液の製造方法。水中での該プロテイン／ペプチド混合物の溶解度を増加させるために有効な量の、リンゴ酸、クエン酸、及びリン酸の混加物である酸を、該プロテイン／ペプチド／水混合物に添加して、プロテイン／ペプチド水溶液を生成することで、少なくとも約7.5％ホエイプロテインを含んだ水溶液、及びホエイプロテイン飲料。【選択図】図５
