The present invention relates to a method for extracting and purifying quinine from Italian ryegrass. More specifically, the method for extracting and purifying quinine from Italian ryegrass comprises the following steps of: obtaining ethanol extract by adding an ethanol solution adjusted to have pH 1 to 2 to Italian ryegrass and extracting the same； obtaining chloroform extract by dissolving the ethanol extract in water, adjusting pH thereof to 9 to 10, and extracting chloroform； and obtaining a quinin-containing fraction by fractionating the chloroform extract into silica gel chromatography using chloroform and methanol as mobile phases. According to the present invention, it is possible to obtain quinine from Italian ryegrass which is forage grass. Accordingly, it is expected to solve a problem that quinine or a raw material thereof are dependent on import, and to contribute to increase of income of farm by providing new use of Italian ryegrass.본 발명은 이탈리안라이그라스로부터 퀴닌을 추출 및 정제하는 방법에 관한 것으로, 구체적으로 이탈리안라이그라스에 pH 1 내지 2로 조절된 에탄올 용액을 가하고 추출하여 에탄올 추출물을 수득하는 단계； 상기 에탄올 추출물을 물에 녹이고 pH를 9 내지 10으로 조절한 다음 클로로포름으로 추출하여 클로로포름 추출물을 수득하는 단계； 및 상기 클로로포름 추출물을 클로로포름 및 메탄올을 이동상으로 사용한 실리카겔 크로마토그래피로 분획화하여 퀴닌 함유 분획물을 수득하는 단계；를 포함하는 이탈리안라이그라스로부터 퀴닌을 추출 및 정제하는 방법에 관한 것이다.본 발명에 따르면 사료작물인 이탈리안라이그라스로부터 퀴닌을 수득할 수 있다. 이에 따라 퀴닌 또는 이의 원료를 수입에 의존하는 문제를 해소하는데 큰 도움이 될 수 있을 뿐만 아니라, 이탈리안라이그라스의 새로운 용도를 제공함으로써 농가의 소득을 높이는데에도 크게 기여할 수 있을 것으로 기대된다.
