PROBLEM TO BE SOLVED: To provide a konjak processed food product having a blood glucose level increase inhibiting effect.SOLUTION: A konjak processed food product containing konjak with 2.5-7.4 pH, and rare sugar as the active ingredients has a blood glucose level increase inhibiting effect in order to ingest 0.3-50 g/day as one day dose of rare sugar for inhibiting blood glucose level increase, and is shaped in an angular shape, a filamentous shape, a round shape, a granular shape, or a tabular shape. One time ingestion can maintain the blood glucose level increase inhibiting effect for one or more days. For instance, the konjak processed food product causes no hindrance in eating by containing rare sugar, and can be suited to the preference of a consumer, and therefore, ingestion for a long period becomes easy, and the blood glucose level increase inhibiting effect can be maintained for a long period.【課題】血糖値の上昇抑制効果を有するこんにゃく加工食品を提供する。【解決手段】pHが、2.5~7.4の範囲にあるこんにゃくおよび希少糖を有効成分として含む、血糖値の上昇抑制のために希少糖の一日用量を0.3~50g/日として摂取させるための血糖値の上昇抑制効果を有する角状、糸状、丸状、粒状、板状の整形したこんにゃくの加工食品。【効果】一回の摂取により一日以上血糖値上昇効果を持続させることができる。例えば、希少糖入りこんにゃくの加工食品とすることにより飲食する際の障害がなく、消費者の嗜好に適合させることができるため、長期間の摂取が容易となり血糖値の上昇抑制効果を長期間維持することができる。【選択図】なし
