The present invention relates to a knob structure for fruit-thinning scissors, and especially, which facilitates simple and solid assembling of scissors blades and a spring constituting the fruit-thinning scissors in the knob structure for the fruit-thinning scissors, and also enables a user to replace the scissors blades in a case of necessity. To achieve this, the knob structure for the fruit-thinning scissors is injection-molded by a synthetic resin, and a supporting protruding rod formed with a fastening groove for spring separation prevention is configured to protrude at a front end in the knob structure so that the spring can be solidly supported. A combining groove is configured lengthily in the knob structure where the supporting protruding rod is configured to protrude. and the combining groove is configured to be eccentric at one side of a center part of the knob structure. A latching groove is formed at an end of the combining groove.
