PROBLEM TO BE SOLVED: To provide a method for removing the core of a head vegetable capable of measuring the size and core position of the head vegetable to be subjected to core removal and accurately removing the core on the basis of the measured values, and to provide a device for removing a core for executing the method.SOLUTION: In the case of using a conveyer belt 3 comprising trays 4 for placing head vegetables to convey the head vegetables to be subjected to core removal, a measurement booth 5, a core removal booth 6, and a division booth 9 are arranged on the conveyer belt 3 in order along the direction of advancing. In the measurement booth 5, the core position of each head vegetable and the sizes of the head vegetable itself are individually measured using an infrared sensor. The obtained individual data is subjected to operation and supplied to the core removal booth 8.
