The invention belongs to the microorganism and food biological technical fields, and relates to an eurotium cristatum strain classified and named as eurotium cristatum NHRI-BC-1.5.1, preserved in CGMCC (China General Microbiological Culture Collection Center) and having the preservation number of CGMCC No.8730. The strain is obtained by isolating from a Bainianmucang (registered trademark) wooden warehouse tea sample of a China tea Hunan Anhua tea factory and then purifying and carrying out selection breeding. In a process of tea fermentation, the strain can bear high temperature, and keeps the growth ascendancy on other bacteria so as to achieve the purpose of inhibiting growth and propagation of the other non-target bacteria and the production cycle is shortened, the production rate is improved, and the quality of tea is ensured.
