Provided is a sensor assembly which includes: cladding which is extended at a predetermined length； multiple optical fiber sensors which include cores extended in a longitudinal direction of the cladding inside the cladding and multiple grids having different refractive indexes from the cores and arranged in the longitudinal direction of the cores in order to interfere with a light path penetrating the cores； and a flexible sensor main body which is formed of synthetic resins. The multiple optical fiber sensors arranged in the sensor main body are formed to be embedded in the sensor main body in the longitudinal direction of the sensor main body so that the circumference of the radial direction of the optical fiber sensors is surrounded by the sensor main body. A sensor manufacturing apparatus to manufacture the sensor assembly includes: a first support which supports a hollow tube body having both open ends； a second support which supports the multiple optical fiber sensors inserted into the tube body at both ends of the tube body； and a synthetic resin injecting device which injects melted synthetic resins into the tube body.
