PROBLEM TO BE SOLVED: To provide instant noodle having good taste and palate feeling, having good reconstitution properties and thereby reconstituted by addition of boiling water even when the noodle has such a thickness as to be nonconventional.SOLUTION: The method for producing instant noodle includes: conducting extremely-strong rolling treatment having a rolling ratio of &ge60% once or more in a process for rolling a noodle strip to make noodle blowing superheated steam to the thus-obtained raw noodle ribbons followed by steaming the raw noodle ribbons with saturated steam or superheated steam while supplying or not supplying water to the raw noodle ribbons, or boiling the raw noodle ribbons to be pregelatinized and drying the noodle ribbons after pregelatinized, in a process for producing instant noodle.COPYRIGHT: (C)2011,JPO&INPIT【課題】 復元性が良く、従来にないほどの分厚い麺厚の麺であっても、熱湯注加によって復元可能で食味食感の良い即席麺を得ること。【解決手段】 即席麺の製造工程において、麺帯の圧延工程で、圧延率60%以上の極めて強い圧延を1回以上行って製麺し、得られた生麺線に対して過熱蒸気を吹き付ける処理を行なった後、この麺に水分を供給し又は供給せずに、飽和蒸気又は過熱蒸気によって蒸煮するか、もしくは茹でてα化し、α化処理後乾燥する即席麺の製造方法である。【選択図】なし
