PROBLEM TO BE SOLVED: To provide an organic acid preparation highly dispersible or soluble even after long-term storage, enabling the sparingly soluble organic acid(s) to be instantaneously dissolved in high concentrations, and suitably usable as an acidulant, microbicide or preservative for food or as a fungicide for controlling plant disease injuries or the like. SOLUTION: The organic acid preparation comprises the sparingly soluble organic acid(s)≤5μm in mean particle size and water and/or an acidic solution, wherein the sparingly soluble organic acid is at least one selected from fumaric acid, adipic acid, succinic acid, sorbic acid and benzoic acid.
