According to the present invention, rapid drying can be performed by weakening electromagnetic properties of food while eliminating the viability of the food to rapidly discharge moisture. Also, the food is generally evenly dried by self-eliminating or artificially eliminating a thermal stratification phenomenon that internal air is layered in accordance with self-temperature. In addition, accumulated latent heat can be dried by maintaining heat generated in the bottom for a while by a latent heat layer having a latent heat function, and rising the same to eliminate the thermal stratification. Furthermore, drying is performed while a taste and nutrition are maintained by maintaining the same condition as that of the drying by sunlight while artificially applying far-infrared rays of a band of 1 to 30 μm, infrared rays of a band of 30 to 1,000 μm, and electron beam of a band of 1,000 to 1,500 μm, and performing drying. Also, vertical stroke is generated by a driving cam rotated by a cam motor while horizontally and continuously shaking a drying rack of a dryer to apply horizontal and vertical vibrations, thereby performing drying with less energy.
