in terms of prevention, it is very beneficial to the use of plant extracts, essential oils, or low molecular weight antioxidant molecules such as glucose, vitamins, flavono\u00eedes, carot\u00e9no\u00eedes) and trace elements (copper, zinc, sele bicycle, etc.) essential for the activity of the antioxidant enzymes.this is the first report on the antioxidant and antibacterial activities of the essential oils of cynara cardunculus l. the results showed that the antioxidant activity of the essential oil of buds is an important activity higher than that of the essential oil stamen formation.this could be due to the high proportion of oxygenated monoterpenes, which are, respectively, 95.25% and 66.56% of the essential oil of buds and stamens.the higher antibacterial activity of essential oils from cynara cardunculus was found in the essential oil of stamens and could be attributed to the strong coordination of carvacrol and eugenol, iso -.it emerges from this study and the high antibacterial activity of the essential oil of stamens, registered against listeria monocytogenes and salmonella enterica, the essential oil can be used to extend the shelf life of food storage.En terme de prévention de maladies, il savère très bénéfique dutiliser des extraits de plantes (huiles essentielles ou molécules antioxydantes de faibles masses moléculaires tels que le glucose, vitamines, flavonoîdes, caroténoîdes…) ou encore des oligoéléments (cuivre, zinc, sélénium,…) indispensables pour lactivité des enzymes antioxydants. Cest le premier rapport concernant les activités antioxydantes et antibactériennes des huiles essentielles de Cynara cardunculus L. Les resultats de lactivité antioxydante ont montré que lhuile essentielle des bourgeons possède une activité importante supérieure à celle de lhuile essentielle des étamines. Cette activité pourrait être due à la forte proportion des monoterpènes oxygénés qui représentent respectivement 95.25% et 66.56% de lhuile essentielle des bourgeons e
