PROBLEM TO BE SOLVED: To provide a method for imparting alcohol-like taste to a non-alcoholic beverage with a taste-imparting component, and a non-alcoholic beverage produced by the method.SOLUTION: A beverage having favorable alcoholic taste with an alcohol percentage of less than 1% is produced by: removing high polar components from components produced by heating concentrated juice at 100 to 120°C for 30 to 240 minutes and then feeding a weakly acidic polymer pigment, i.e. a component produced by separation with an ultrafiltration membrane having a cutoff molecular weight of 3000 or more, in an amount of 1 to 300 mg/L to the beverage. A method for producing the beverage and a method for improving the taste of beverage are provided.
