Filter for use in the processing of paste-like foods, in particular in the manufacture of processed cheese, comprising an enclosed housing (12) with a feed inlet (16) for the product to be filtered, a discharge (20) for the filtered product, an outlet for the filtered residue and a filter insert (14) disposed between the feed inlet (16) and the discharge (20), said insert having a cylindrical filter wall through which the product flows in the radial direction from the inside out, wherein a rotatable core element (30) is provided that is disposed coaxially in the filter insert (14), wherein a defined (annular chamber 36) is designed between the core element (14) and the filter wall, wherein the core element (30) is dimensioned such that the resultant annular chamber (36) makes a constant flow of the product possible, wherein at least one scraper (38) is disposed on the outer periphery of the core element (30), said scraper scraping the inner surface of the filter wall as the core element (30) rotates so that the residue can be discharged.
