Preparing co-crystallization compositions, containing sugar alcohols such as erythritol as a crystallisable carrier and a high intensity sweetening active, via the partial dissolution of the crystallisable carrier in an aqueous solution before or after the addition of the sweetening active. This mix is then dried and recrystallized to form the final co-crystallization compositions. Methods of using the co-crystallization compositions are also disclosed.
