PURPOSE: A fish paste dough exhaust apparatus is provided to improve the elasticity and mouthfeel of the fish paste and to elaborate the texture of the fish paste. CONSTITUTION: A container in a cylindrical shape accept fish-paste dough(P). A pressure device applies downward pressure to the fish-paste dough within the container by pressing a pressure plate. A resistant path part(40) is installed to be connected with the inside of the container, which forms a path in a zig-zag shape where fish-paste dough passes. A dough molding frame(50) positioned in the lower part of the resistant path part molds and ejects fish-paste dough. Multiple resistor plates(41-44) are cross-fixed downward to one side wall(40a) and the other side wall(40b) alternately with a predetermined gap. The dough molding frame is a planar block body with a discharge hole for discharging molded fish-paste dough in the center. The lower part of the resistant path part is formed with molding frame holding fixtures for supporting the dough molding frame in both sides. A dough cutting body(52) and a cutting body frame cut fish-paste dough(P1) ejected from the discharge hole in a fixed length.본 발명의 목적은 어묵제조장치의 어묵반죽이 배출 및 성형되는 과정에서 충분히 치대어지도록 하는 구조를 형성함으로써 어묵의 조직이 치밀해지고 탄력과 식감을 향상시킬 수 있는 어묵제조장치용 반죽배출장치를 제공하는 것이다. 이에 따라 본 발명에 따른 어묵의 탄력향상을 위한 어묵반죽배출장치는, 어묵반죽을 수용하는 통형상의 용기부와, 상기 용기부의 상측에서 상기 용기부 내부의 어묵반죽에 하향압력을 가하는 가압장치부와, 상기 용기의 하부에 설치되어 상기 어묵반죽이 통과하는 지그재그 또는 “ㄹ”자 형상의 통로가 형성된 저항경로부와, 상기 저항경로부의 하단에 위치하여 상기 어묵반죽이 성형되어 배출되도록 하는 반죽성형틀을 포함하는 것을 특징으로 한다.
