PROBLEM TO BE SOLVED: To solve such a problem that garlic makes an eater feel a unique flavor and pungent taste of stimulating appetite when eaten, emits a peculiar odor that makes some person feel unpleasant after eating, and consequently, particularly the odor after eating is a barrier, not only many persons refrain themselves from eating garlic but also a using method is limited at breakfast or before meeting a person.SOLUTION: Garlic is coated with a tea extract. Preferably a tea extract that is mixed with an organic acid and adjusted to a pH of 2-6 is prepared and garlic is immersed in the prepared tea extract to coat the surface of garlic. The obtained garlic has a reduced odor by the action of catechin and an eater does not care about smell even after eating garlic. A peculiar flavor that an eater feels in eating is also reduced and a food is incorporated with garlic as an edible functional material without having a consciousness of garlic.COPYRIGHT: (C)2013,JPO&INPIT【課題】ガーリックは食べるときに食欲をそそる独特の風味や辛みを感じさせると共に、食べた後には人によっては不快に感じる独特の臭いも放出する。従って、特に、食べた後のこの臭いが障壁となり、朝食の際や人と会う前には、食べるのを控える人が多かっただけでなく、使用の仕方も限定されていた。【解決手段】ガーリックを茶エキスで被包させる。好ましくは、茶エキスに有機酸を含ませてpHを2~6に調整したものを準備し、これにガーリックを浸漬させてその表面を被包させる。得られたガーリックは、カテキンの作用により低臭化されており、食べた後でも臭いが気にならない。また、食べる際に感じる独特の風味も低減されており、ガーリックと意識せずに食用機能性素材として食品に含ませることができる。【選択図】 なし
