PROBLEM TO BE SOLVED: To provide stick-like baked confectionery improved in mealy palate feeling and flavor of baked confectionery so as to have crispy, hard and crunchy palate feeling and flavor: and to provide a method for producing the confectionery.
SOLUTION: The method for producing stick-like baked confectionery comprises: a process for molding dough containing &ge35 wt.% of hard flour into a stick shape, a process for deaerating the dough under reduced pressure before or after the forming process, and a process for baking the deaerated molded dough.
