To provide a processing method of citrus fruit for effectively using whole citrus fruit with economy.SOLUTION: Water of 0.2-5 times a weight of citrus fruit is added to the citrus fruit before, after or during crushing the citrus fruit and the mixture is subjected to solid liquid separation after being crushed. The citrus fruit may be a skin, a content, a skin and content, or a solid after solid liquid separation. The processing method of the citrus fruit is configured in such a way that: a cylindrical body in which the peripheral wall is composed of a screen and a spiral screw blade is provided around an axis is installed with the axis directed toward horizontal direction; the crushed citrus fruit including water is charged in one axial end of the cylindrical body; and the solid liquid separation may be conducted while the citrus fruit is transferred to the other end of the cylindrical body by the screw blade.SELECTED DRAWING: Figure 1【課題】 柑橘系の果実の全体を無駄なく有効使用するための加工方法を提供する。【解決手段】 柑橘系の果実を破砕するに際し、破砕の前、後、あるいは途上で、前記果実の重量の0.2~5倍量の水を加え、破砕後、固液分離する。 柑橘系の果実は、皮、実、皮と実、あるいは固液分離後の固体であってよい。 固液分離は、周壁がスクリーンで構成され、内部の軸周りにスパイラル状のスクリュー羽根が設けられた円筒体を、軸が水平方向となるように設置し、円筒体の軸方向の一端部に、水を含む破砕後の柑橘系の果実を投入し、前記スクリュー羽根によって円筒体内を他端部に移行する間に、行ってよい。【選択図】図1
