PROBLEM TO BE SOLVED: To provide a method for producing a coloring structurized protein product having a texture and a color similar to those of an acceptable meat by simulating the fiber structure of an animal meat.SOLUTION: Provided is a low water molding production method for a coloring structured protein product having arranged protein fibers and a texture like a meat, and comprises: a step a. of mixing a plant protein material with at least one kind of coloring agent to form a blend protein mixture, wherein the content of the plant protein-containing material lies in the range of 1 to 35 wt.% and a step b. of extruding the blend protein mixture from a die assembly under the conditions at a temperature of 100 to 180°C under high pressure to form a coloring structured protein product including the arranged protein fibers, and, as the above die assembly, a specified die assembly is used, and the protein material includes: (a) soybean protein of 45 to 65% on a dry substance base (b) wheat gluten of 20 to 30% on a dry substance base (c) wheat protein of 10 to 15% on a dry substance base and (d) a fiber of 1 to 5% on a dry substance base.COPYRIGHT: (C)2015,JPO&INPIT【課題】動物肉の繊維構造をシミュレートし、容認できる食肉様のテクスチャおよび色を有する着色構造化タンパク質製品の製造方法を提供すること。【解決手段】整列したタンパク質繊維及び食肉様のテクスチャを有する着色構造化タンパク質製品の低水分押出製造方法であって、a.植物タンパク質材料を少なくとも1種の着色剤と混ぜ合わせて、ブレンドタンパク質混合物を形成する工程と、ここで、植物タンパク質含有材料の含水量は1重量%~35重量%の範囲であり、b.100℃~180℃の温度および高い圧力の条件下で前記ブレンドタンパク質混合物をダイアセンブリから押し出して、整列したタンパク質繊維を含む着色構造化タンパク質製品を形成する工程と、を含み、前記ダイアセンブリとして、特定のダイアセンブリを用い、前記タンパク質材料が、(a)乾燥物質ベースで45%~65%の大豆タンパク質と、(b)乾燥物質ベースで20%~30%の小麦グルテンと、(c)乾燥物質ベースで10%~15%の小麦デンプンと、(d)乾燥物質ベースで1%~5%の繊維とを含む、製造方法。【選択図】なし
