PROBLEM TO BE SOLVED: To provide a water-soluble starch powder which has, without deteriorating the characteristics inherent to starch such as adhesiveness and thickening nature, excellent properties such as its solubility in water is high and an increase in reducing capability does not take place and which has an effect of improving the eating feeling of foodstuffs.

SOLUTION: The water-soluble starch powder is characterized in that (a) it is soluble in cold water, (b) its viscosity at 20 wt.% is in the range of 50-3,000 mPa s, (c) its average mol.wt. is in the range of 200-10,000 kDa, and (d) the amount of reducing sugar is &le1%.
