PROBLEM TO BE SOLVED: To provide a technology that enables simple isolation and purification of dicaffeoylquinic acid or tricaffeoylquinic acid.SOLUTION: A method for producing a composite containing a caffeoylquinic acid compound includes a step of mixing at least one kind of caffeoylquinic acid compound selected from the group consisting of dicaffeoylquinic acid and tricaffeoylquinic acid with animal protein in an aqueous medium to form a composite insoluble in the aqueous medium from the caffeoylquinic acid compound and the animal protein.
