A microwave heating apparatus and method of heating. The microwave heatingapparatus including: a housing thatcontains a heating chamber adapted to receive an article to be heated, thechamber being at least partially defined by electromagneticshielding a microwave source for generating microwaves, the microwave sourcebeing located outside of the heating chamber andan antenna arranged substantially within the heating chamber and configured tosupply the generated microwaves substantially withinthe heating chamber, the antenna being configured to directly deliver thegenerated microwaves to the article in a substantiallyuniform maimer. The method of heat treating organic matter with a microwaveheating apparatus including a microwave source locatedoutside of a heating chamber, the method including: generating microwaves withthe microwave source supplying the generatedmicrowaves within the heating chamber with an antenna arranged substantiallywithin the heating chamber, wherein the antennacomprises a loop that extends about an internal circumference of the heatingchamber introducing the organic matter into the heatingchamber and through the loop via an opening of the heating chamber heatingthe organic matter with the generated microwavesremoving the organic matter from the heating chamber through a further openingof the heating chamber.
