PURPOSE: A production method of flying fish roe is provided to remove the fishy smell of the flying fish roe using natural products, and to improve the quality of the flying fish roe. CONSTITUTION: Flying fish roe is mixed with electrolyzed water for processing. The flying fish roe is soaked in natural products selected from an orange peel water solution, a green tea water solution, or a Curcumae longa water solution. The electrolyzed water processing step is conducted by using the electrolyzed water with the concentration of 50-90%, for 10-30 minutes. The concentration of the orange peel water solution is 1-3.5%. The concentration of the green tea water solution is 2-6%. The concentration of the Curcumae longa water solution is 0.1-0.8%.
