Disclosed is a process for producing a lipid enriched fraction and a lipid depleted fraction comprising the following steps: (1) providing a high-fat low-lactose dairy starting material that is a powder (2) subjecting the starting material to a liquid dimethyl ether extraction process to produce a lipid enriched fraction and a lipid depleted fraction, wherein the pressure of the liquid dimethyl ether is at least 10 bar greater than the vapour pressure, and the temperature of the dimethyl ether is in the range 273 - 373 K and (3) optionally the lipid enriched fraction is subjected to a near critical carbon dioxide extraction process to produce a neutral-lipid depleted fraction. Further disclosed is an infant formula which comprises: (a) 30 - 60 % w/w lactose (b) 15 - 35% w/w vegetable oils (c) 0 - 40% w/w skim milk powder (d) 0 - 40% w/w whey protein concentrate and (e) 1 - 50% w/w of a product produced by the above process.
