PROBLEM TO BE SOLVED: To provide a method for producing a natural vanilla perfume, capable of hygienically and stably providing the natural vanilla perfume having rich aroma and high quality that are characteristic of a naturally occurring material.
SOLUTION: The method for producing a natural vanilla perfume comprises: a first step of sterilizing a fruit of a Vanilla plant or a hybrid thereof under a condition not inactivating at least an enzyme having an action of decomposing a precursor of an aroma component in the fruit so as to produce the aroma component among enzymes contained in the fruit and a second step of placing the fruit sterilized in the first step in a breathable container that can be at least partially opened and curing the fruit in an aseptic environment under controlled temperature and lighting conditions.
