PROBLEM TO BE SOLVED: To shorten a cooling time of a cooled object in performing slow cooling after rapid cooling in a vacuum cooling process.
SOLUTION: This cooling device comprises a cooling compartment 2, a vacuum cooling means 4 having a pressure-reducing capacity adjusting means 76, and a controller 6, further comprises a pressure sensor 27 detecting a pressure in the cooling compartment 2 and a product temperature sensor 26. The controller 6 performs rapid cooling by increasing a pressure-reducing capacity by the pressure-reducing capacity adjusting means 76 until a saturated temperature corresponding to the detected pressure by the pressure sensor 27 becomes almost equal to the detected temperature by the product temperature sensor 26, after starting the vacuum cooling process, and then performing slow-cooling by decreasing the pressure-reducing capacity.
