Casein compositions for increasing the rate of gastric emptying following ingestion of the composition, increasing the digestibility of a protein composition, or increasing the rate of delivery of amino acids to the blood, or for increasing the blood serum concentration of free leucine in a subject, preferably to substantially the same level as whey protein, the casein being about 10 to about 100% calcium depleted, having a degree of hydrolysis less than about 1% and having an unmodified phosphorylation pattern.Compositions à base de caséine permettant d'augmenter la vitesse de vidange gastrique après ingestion de la composition, d'augmenter la digestibilité d'une composition de protéine, ou d'augmenter la vitesse d'administration d'acides aminés dans le sang, ou d'augmenter la concentration de sérum sanguin de leucine libre dans un sujet, de préférence à sensiblement le même niveau que la protéine de lactosérum, la caséine étant appauvrie en calcium d'environ 10 à environ 100 %, ayant un degré d'hydrolyse inférieur à environ 1 % et ayant un motif de phosphorylation non modifié.
