The present invention provides a nutrient rich, food grade defatted corn germ flour derived from a dry ground corn germ fraction. Food grade defatted corn germ flour contains high levels of protein, dietary fiber and amino acids and is low in fat. In addition, a method is provided for preparing high quality food grade defatted maize germ flour from dry milled maize germ fraction, by forming vests and removing oil from high quality maize germ fraction. dry ground corn.
